Republic Square Salad

This delicious salad pays homage to the Republic Square Farmer’s Market, held every Saturday in downtown Austin.

Number of Servings: 4

For the salad:
1 fennel bulb, shaved
1 large watermelon radish, shaved
1 english cucumber, sliced thin
3 rainbow baby carrots, shaved on the bias
1 red beet, shaved
1 golden beet, shaved
4 heads mixed lettuces (we use red oak, lolla rosa, baby romaine and red leaf)
4 oz. baby arugula

For the citrus vinaigrette:
Juice of: 1 lemon, 1 grapefruit and 1 orange
2 Tbsp. rice wine vinegar
½ cup canola oil
1 garlic clove, minced
2 tsp. Dijon
1 tsp. honey
Salt and pepper to taste


For the citrus vinaigrette:
Combine all ingredients, except oil, in a mixing bowl and begin whisking. Add to oil in a slow, steady stream until dressing is emulsified. Set aside.

For the salad:
Wash all lettuces and spin dry. Cut lettuce leaves into large ribbons and add to a large mixing bowl. Add in all shaved vegetables and toss with citrus vinaigrette. Season with salt and freshly ground pepper and serve immediately.
