A delicious sweet treat for any season, just switch up the fruit filling!
Number of Servings: 12 fritters
1 cup all-purpose flour
1 tsp. salt
1 tsp. baking powder
2 Tbsp. sugar
1 tsp. cinnamon
1/2 tsp. cardamon
1/3 cup whole milk
1 Tbsp. melted butter
1 ¼ cup chopped roasted peaches
2 qts. peanut oil or soybean oil (or any other oil resistant to high heat)
Heat fryer to 375F.
Mix the dry ingredients in a bowl and make a well in the center. Add the wet ingredients to the well and slowly mix into the dry ingredients until combined, being careful not to over mix. Fold in the roasted fruit.
Scoop into fryer in 2 oz scoops, for consistency it helps to use an ice cream scooper. Fry in batches, flipping half way through the cooking, about 3 minutes on each side. Test the center with a toothpick to be sure the center is done. Sprinkle with powdered sugar and serve warm with vanilla ice cream and/or caramel sauce.
For a fall twist use roasted apple.
