Austin Hippie Salad

This oh-so-Austin salad is one of our most popular lunch items.

Number of Servings: 4

For the salad:
1 lb. spinach leaves
1 lb. Boston bibb, shredded
1 lb. radicchio
1 cup chickpeas
1 cup candied pecans
½ cup red currants or raisins
½ cup smoked onion vinaigrette dressing (see recipe below)
½ cup pickled shallots
1 ½ cup avocado, sliced
½ cup sunflower sprouts

For the smoked onion vinaigrette:
1 medium red onion, smoked
1 garlic clove
½ shallot
1 tsp. kosher salt
2 Tbsp. Dijon
½ cup red wine vinegar
1 cup canola oil

Directions

For the smoked onion vinaigrette:
Place all ingredients in a blender except the canola oil. Blend and slowly add oil to emulsify. Keep refrigerated.

For the salad: 
Toss the first seven ingredients until leaves are coated with the vinaigrette. Divide evenly into four salad bowls. Garnish with the pickled shallots, avocado and sunflower sprouts.
